Dairy Free Mashed Potato

Can you seriously imagine eating mashed potato without butter? It’s like hipsters without glasses. Old ladies without broken hips. Homer without Marge. Pretty improbable but not impossible. Ladies and gentlemen, I have finally discovered a dairy free mashed potato that doesn’t suck balls. It is actually quite nice and by that I meant the former not the latter.

This amazing mashed potato is:

  • Dairy free
  • Low in calories
  • Vegan friendly
  • Syn free (if you replace the mustard with mustard powder)
  • Easy to make

I know you are probably skipping this jibber jabber to get to the recipe because that’s what I do so lets get to it.

The magic ingredients

Have you spotted my magic substitute for butter? Yes it is vegetable stock but you obviously add it to hot water. We’ll get to that later.

Nahh all the ingredients are from Aldi, naturally. 

Dairy Free Mashed Potato

Ingredients

  • Potatoes, washed
  • 1 tsp wholegrain mustard
  • 100ml vegetable stock
  • 1 garlic clove, grated
  • salt and pepper to season

Instructions

  1. To begin with, peel the potatoes and cut into cubes. Whatever size you like
  2. Bring to boil a pan of salty water and add your potatoes
  3. Boil for about 20 minutes until soft
  4. If you boil your potatoes for too long they will turn to mush!
  5. Drain the potatoes and mash a tiny bit.
  6. Add the mustard, garlic and salt and pepper.
  7. You can put as much garlic in as you want. I put in 2 cloves so I'll be safe from the vampires.
  8. Add some vegetable stock
  9. Mash mash mash mash mash mash
  10. Add more vegetable stock
  11. Mash mash mash mash mash mash
  12. Stop. Done. Don't over mash or it'll turn to mush.
  13. Mushy mash isn't nice.
